What is Petillant Naturel (Pet Nat) – is a natural sparkling wine made in the ancestral method. The history of Pet Nat is it was first developed in the 16th Century when a monk of the Benedictine Abbey in Saint Hilaire, France, noticed that a sealed bottle of wine had started to produce bubbles.

Pet Nat is made by the winemaker bottling the wine before the primary fermentation is finished, without adding any further yeast or sugar for a secondary fermentation. The remaining natural sugar in the grapes is converted to carbon dioxide by the yeast creating pressure and an effervescence.

The wine is not filtered and once opened the bubbles will lift from lees in the bottom of the bottle creating a cloudy sparkling wine. This beautiful wine allows the natural “terre noire” of the grapes to shine through. Petillant Naturel is naturally lower in sugar.

Our Heathcote Shiraz grapes were destemmed, crushed and pressed quickly to supply a bright and moreish finish to our rose coloured Pet Nat. Prefating the champagne method, this ancient style of wine, Petillant Naturel (Pet Nat) is bottled before the fermentation finishes and produces a small petite natural bubble with a cloudy, unfiltered finish, which allows the softer, light cherry flavours to infiltrate the tongue, leaving strawberries and guava flavours to finish.
